Allium ampeloprasum, commonly known as leek, is a biennial that is typically grown in vegetable gardens as an annual. The edible part of the plant is not an underground bulb (leeks do not form bulbs), but is the cylindrical white stalk that rises about 6-10" above the soil surface.
Leeks contain dietary fiber, minerals—nickel, potassium, iron, magnesium, calcium, manganese, phosphorous; vitamins A, C and K, folate, and moderate amounts of vitamins of the B complex (B1, B2, B3 and B6). Leek is an excellent dietary food, which is very low in calories but is packed with multiple healthy nutrients and phytonutrients.
