Ethyl Maltol is a powerful sweet aroma chemical used extensively in perfumery and fragrance formulation. It has a characteristic sweet, caramelized sugar, cotton-candy, fruity and jam-like aroma. It is much stronger and sweeter in odor than maltol and is especially useful for creating gourmand, fruity and candy-like fragrance accords. Ethyl Maltol is very powerful, so relatively small amounts can noticeably change a fragrance. Too much can dominate the perfume and create an excessively sweet, candy-like character.
